Nablus is famous for its knafeh – toasted semolina, goat cheese, drenched in copious amounts of syrup. I used my rudimentary Arabic to navigate my way around Nablus’s old city until I finally found the famous Al-Aqsa, a simple knafeh shop with a few busy tables inside and a lot of people standing and eating outside.
